I’m always looking for a quick and healthy breakfast option and if it’s picky kid approved that’s a win in my house! The recipe can be made two ways one of which is paleo and one which has an extra ingredient.
Paleo way:
one ripe banana
two eggs
few shakes of cinnamon (this doesn’t really count as an ingredient)
Non- Paleo Way:
one ripe banana
two eggs
few shakes of cinnamon
1/2 cup of gluten free flour (can be rice flour or almond flour)
Either way you choose you simply mix all the ingredients together. I use a fork but you can use a blender! The riper the banana the better. I use butter on the pan but feel free to use coconut oil or vegan butter. Use a ladle or spoon to scoop the batter into small circles on the pan. The recipe makes about 4-5 pancakes. Watch them carefully and when they start to brown flip them over. Whole recipe takes about 5 minutes for a gluten free and sugar free pancakes! I often batch cook these as my kids love them!
